Have a hectic schedule ahead of you, but you still have to feed hungry mouths? Try this hearty Crockpot Taco Soup. It’s easy, hassle free, big enough to feed a crowd, and budget friendly!
Monday, being Halloween was a bit of a whirlwind at our house this week. Trick or Treat and work in the same day, plus work and school the next morning makes for a crazy tight schedule!
I knew there wouldn’t be a second to spare so I made up some crockpot taco soup so we would have something warm and nourishing to go along with all that candy! A great side for this soup would be a salad of romaine, cucumbers, and grape tomatoes with a plain or spicy ranch dressing!
Crockpot Taco Soup Serves approximately 8
- 1-2 lbs lean ground beef or ground turkey
- 2 cups or 2 cans of pinto beans
- 1 can or cup of kidney beans
- 1 cup of frozen corn
- 1 can diced rotel tomatoes with green chilis
- 1 can diced tomatoes
- 1 onion
- 1-2 TBS minced garlic
- 1 packet of taco seasoning mix
- 1 packet of ranch dressing mix
- Several Cups Water
Yummy Toppings to Make Your Soup Extra Fancy:
- Black Olives
- Shredded Cheese
- Green Onions
- Tortilla Strips
- Hard boiled Eggs
- Hot sauce
- Sour cream or Plain Greek Yogurt
First brown your ground beef or turkey in a skillet. Dice onion while your meat is browning. Once it’s about half cooked add in your onion and minced garlic. Then drain meat when it is finished cooking and set to the side.
Spray your crockpot with cooking spray or use a crockpot liner (insert link) to make cleanup easier. Add all ingredients together in crockpot. Add your water last after you see how much liquid is already in your pot. You want to have a good chili or stew consistency but enough water so it doesn’t dry out in the crockpot. I ended up needing about 2 cups of water.
This soup is great to throw on before you head to the work and will still be delicious after it cooks all day. I forgot to turn off the soup before we headed out to the festivities and it was still delightful at 9pm when I remember to turn it off!
Trick or Treat ended up being pretty hectic so I completely forgot to snap photos, this is the leftovers I’m having for lunch!
Make a Second Meal
If you don’t like leftovers or have a small family this soup freezes well and there should be enough to have another meal at a later time.
To make a ranch dressing as a soup or salad topping use some sour cream or plain greek yogurt and mix in some hidden valley ranch or my favorite spicy hidden valley ranch.
