Healthy Breakfast Recipe: Egg Tortilla with Zucchini Hash Browns
Here is a simple and quick healthy breakfast recipe that is great for busy mornings. It’s full of protein, a few healthy carbs, and a little bit of fat. If this recipe isn’t quite filling enough have a slice of whole wheat toast or some orange slices to bulk up your healthy carbohydrates. There is already plenty of protein and fat in this meal so if you need a bit more food go for healthy carbs.
Breakfast is a Rockstar
Remember breakfast is a big deal. It gets your metabolism going after you have been sleeping all night. Skipping breakfast gives your body a free for all of feasting off of your muscles. That’s right your body isn’t going to start devouring fat and you’re not going to lose any of that blubbery fat weight from skipping breakfast so don’t do it! If you want your body to run like a well-oiled machine don’t skip out on breakfast.
This healthy breakfast recipe is great for ladies that are cooking their eggs at the same time they are getting ready for work in the mornings! Yep, you can totally walk away for a couple of minutes while these eggs cook as long as you remember to come back!
Ingredients for Egg Tortilla
- 1 whole egg
- 3 egg whites
- Cooking spray
- Dash of parsley
- Dash of Dried Dill
- Salt and Pepper to Taste
Ingredients for Zucchini Hash Browns
- Dash of Parsley
- Dash of Garlic Powder
- Dash of Onion Powder
- Salt and Pepper to Taste
- Optional Feta Cheese for Garnish. The Feta I purchased was a bit salty so I do recommend tasting your finish product before salting!
Instructions For Egg Tortilla
Coat skillet with cooking spray and heat on medium. Add eggs and spices to a bowl and fluff. Once the skillet is hot add your eggs. Roll the eggs around the skillet to coat evenly. Turn heat down a just a bit and leave it to cook for several minutes. Go put on your pants or brush your hair!
Check on your eggs. If the top is solid or you like a bit of flow to your eggs you are done. If your eggs need to firm up, very carefully slip a spatula underneath your egg tortilla and flip. Cook for an additional minute and remove from heat.
Instructions for Zucchini Hash Browns
Peel them up while your eggs are cooking if you don’t have anything else you should be doing or have them ready to toss in the skillet when your eggs come out. If your kitchen is overflowing with skillets you can level up and cook both at the same time!
Peel zucchini with a specialized peeler or if you have a regular peeler you may want to go back at your peels with a knife and split them into hash brown strings. I bought one at Target several years ago but the link takes you to one on Amazon!
Spray your skillet with cooking spray heat to high and wait! As soon as your skillet is piping hot, pile your zucchini on in a mound and mash it down with a spatula. Toss spices on top of your hash brown patty. Let it cook for a minute or two. Flip just before zucchini starts to brown. The texture won’t be crispy like a traditional hash brown but they are quite delicious! Plate your egg tortilla add zucchini hash browns roll into a taco and top with feta cheese. Enjoy!
