Beat the Heat with these Easy Summer Dinner Ideas

Are you in desperate need of easy summer dinner ideas? I don’t know about you all but it’s June in Texas and the thought of spending time in a hot kitchen is about as desirable as walking over hot coals on a Sunday afternoon.

Let alone thinking about putting that hot food in my belly.  Meh, not today!

Not to mention our central air is on the fritz, so we bought a window unit and our all hunkering down in the one cool room of the house!

So I’m guessing you and your family would still like to eat even if it’s something of the cooler variety.

Check out these easy summer dinner ideas and stay cool my friends!

Pasta salad

Bring a pot of any pasta to boil, cook, drain and let cool.  Mix in some olive oil, herbs and spices, fresh veggies and protein and dinner is served.

Try an Italian style pasta salad with pepperoni, sliced black olives, sweet peas, grape tomatoes, and broccoli florets all topped with Italian herbs.

Gazpacho

Cold soup freaks me out ….I still haven’t been brave enough to try it!!  I’m pretty sure it’s just a mental block because I hear they are really great.  Don’t let my sill fear stand in your way.  This recipe gets rave reviews so try it out!

  • ½ Onion
  • 2 Cucumber
  • 1 Avocado
  • 1 Green bell pepper
  • Cilantro to taste
  • 1 Jalapeno (optional)
  • 1 TBS Olive oil
  • 2 Juice of Limes
  • 1 Cup Water
  • Salt and pepper to taste
  • 1-2 tsp. Garlic minced

 

Dice all of the ingredients and pulverize in your food processor.  Your eventual result should be a creamy soup.  If you food processor can’t get you all the way there finish off with a blender. You can serve this soup with a bit of cream but if you aren’t careful the cream will overpower the other flavors.

Bean Salads

A great meatless option that still gives you protein and some complex carbohydrates to finish your day off strong. Here is a dill flavored bean salad to try.

  • Chickpeas
  • Cilantro
  • Grape tomatoes
  • Cucumbers
  • Olive oil
  • Lemon juice
  • Salt and pepper
  • Garlic
  • Dill

Corn salads

Corn is in season and you can use it as the base for a delicious and hardy salad as well.  I like to give corn salad some Mexican flare.

  • Fresh corn cut off 4 – 6 cobbs
  • Lime juice, 2 limes
  • Chopped Cilantro to taste
  • 1 Diced Yellow onion
  • 1 can Black beans
  • 1 Diced red pepper
  • 1 Diced zucchini
  • ¼ Ranch dressing Packet (I used the spicy packet)

Chicken wraps

Chicken is great for adding all kinds of flavors.  It’s really easy to toss together a quick mean.

Grab a rotisserie chicken on your way home along with some wraps. Remove chicken from the bone.  Toss chicken into the food processor once you have pulled it off the bone for a finer shred. Dress it up with some healthy toppings and dinner is ready!

Try a Greek wrap using hummus, feta cheese, spinach, sliced cucumbers, and red onion.  Don’t forget the olives and sliced red peppers for even more flavor.

Wraps are a great way to get a filling meal without heating up your kitchen.  Grab a wrap some spread like hummus, protein and some veggies and you are good to go. 

Salad Bar

A home buffet sure is healthier than any restaurant.  Wash up some crisp greens and let your family make their own restaurant worthy salads!

Start with a base of fresh and crisp greens.  Set out bowls of proteins, veggies, healthy fats, and some crunchy toppings!

  • Beans

  • Carrots
  • Broccoli
  • Cucumbers
